Explosive War: Old Style vs New Style Muay Thai
This explosive Muay Thai war is one of my favorite fights to watch. Tawatchai has the most amount of fights I've ever seen in Muay Thai (780!) and he is a good representation of old style Muay Thai, which includes flashy techniques. Although he isn't a slickster technician like some of his peers that choose these techniques, it's still something we see much less often today. Damien Trainor is a UK Muay Thai legend and pioneer. Influenced by Ramon Dekkers and Mike Tyson, he had heavy hands and dutch style combinations with the kicking finesse of the Thai style. Apart from the explosive excitement of this bout, what really stood out to me is how Trainor saw the pattern of right kick - right punch by Tawatchai and countered it beautifully. Definitely a fight to study to learn how to deal with the explosive right kick - right punch chain. Clothes bush Essentially, you should go for a handmade product because it lasts longer, the bristles will stay in, they won't come loose, and on top of that, it's superior to a lint roller. 2. Natural fibers In the 1930s, modern fibers, synthetic fibers became popular and they were the new thing and sometimes you can find them in bespoke garments. 3. Suspenders Sometimes known as braces, they have an advantage over belts in the sense that they hang on your shoulders and as such, you can have your pants a little looser. 4. Good old wooden hanger I know you probably see those plastic ones these days and they are a lot less expensive and you can even get more in your closet, however, having a nice wooden hanger that is matte and that can absorb some sweat and that supports your shoulder is much better for your jacket any day. 5. Fountain pen Most people these days use just a ballpoint pen and that's all they know and that's all they have. With a fine nib and ideally in gold, you create a really nice font, a little more pressure, you get wider lines and slimmer lines which makes your signature fake proof and on top of that, it's just a nicer, cleaner line. 6. Photo album I know most people take pictures with their phones today and it's nice and convenient and you can snap shots that you otherwise would never take, however, having a physical photo album that you can go through with your parents or your loved ones is just a one of a kind experience that can't be replicated on a screen. 7. Cast iron pan Cast iron can be heated to incredibly high temperatures and if you grease them right, they are naturally non-stick. 8. Good old hats The reason being, back in the day, a lot of men wore hats and so they were companies that focused exclusively on the higher end of the market. 9. How to Use a Colonial Era Printing Press
At the 2012 California Antiquarian Book Fair we met up with the International Printing Museum and they demonstrated how an old style printing press works. Books printed before the industry was digitized would have been printed using this method. This miniature colonial style printing press, similar to what Benjamin Franklin would have used, was made in 1976. To make a print in the 1700's and 1800's you'd take these ink bulbs and dip them in the ink, and then patted them on the type. To make it easier, today we use a brayer, and roll a layer of ink across the type. The type is all set one letter at a time, composed with spacers, locked in with blocks called furniture and held together by a metal frame called a chase. If the type isn't held together tightly enough the letters will fall out as soon as pressure is applied to the press. Next you place the paper in the appropriate spot, close the press, and roll it into place. This would have been a labor intensive job with some of the big presses during the colonial days. Next you pull the devils tail, applying pressure to the type and printing your page. Old Fashioned - How to Make the Classic Whiskey Cocktail like James Bond (Cocktails & Pussy Galore)
How to make an Old Fashioned worthy of being called a James Bond cocktail. The series, Cocktails and Pussy Galore, shows you how to drink like 007 using the Ian Fleming books (not the movies) as the source, which takes you beyond the typical James Bond Martini. The Old Fashioned was a drink originally created in the late 1800's as a rebellion against elaborate alcoholic drinks. It was an attempt to go back to an old fashioned style of cocktail. The true definition of a cocktail is said to be a combination of a spirit, bitters, water and sugar. So this, the Sazerac (http://youtu.be/gxYEdsT06uk) and the Cranston (http://youtu.be/8HLMWpvm8Y4) would definitely fit into that definition. The Old Fashioned was, at one time, commonly made with an orange wheel and candied, maraschino cherry mashed up in the base of the drink. Those are often not as great as the recipe I prefer. Also, another common thing that people do is use a sugar cube instead of Simple Syrup (http://youtu.be/62YNp0jgzvU). That's why a lot of Old Fashioned recipes call for a splash of water. Essentially the idea is to use the water to make Simple Syrup, so just cut out the middle man and use Simple Syrup. Another variation is to use Rye as the base spirit. Totally acceptable, but James Bond preferred bourbon, so that's how this one was made. In the books, James Bond was a huge whiskey drinker. He practically fiended for the stuff. He drank more whiskey than any other drink. Yet, that was changed a decade later when the Connery movies started coming out. In the second book, Live and Let Die, Bond imbibes some Old Fashioneds and stipulates that they be made with Old Grand-dad bourbon. Since Bond, liked strong, well-made drinks, you should opt for a Bonded or Bottled-in-Bond whiskey. Bonded is not a double entendre, it's a designation for American spirits that means it's 100 proof. Most bourbons make an 80 proof product, but for a truer experience, you should go with 100 proof (or 101 in Wild Turkey's case), 007 would approve. Cheers! You can leave it in a boiler with a lid on it in refrigerator. Get it out the next day warm it on the stove just to Luke warm. You must mix it up before baking because the spices will float to the top in the refrigerator. I do recommend making it a day ahead, because it is a day long ordeal which you do not need on turkey day. If you make ahead do not put all the chicken in the dressing, save some to garnish the top of dressing before cooking, it is just prettier this way. Preferably the white meat placed into the dressing with about ¾” sticking up for browning. Do not make gravy a day ahead. Fryer Chicken: (do not by a roasting chicken), boil chicken with 1/2 STICK MARGARINE OR BUTTER AND 1/2 TSP. SALT 1/4 TSP. PEPPER 1 KNORR CHICKEN BOUILLON Save broth for dressing and gravy, pick chicken off bones to place in dressing. Save white meat for garnishing dressing. If you are boiling the giblets for gravy, boil them in a separate pot. “Y’all are going to love my dressing! Make sure it’s runny after you mix it up and remember it won’t look as runny cold and that is ok” Tammy Chicken N Dressing Cont’d Cornbread: get up early about 7 am and make cornbread. Bake in cake 1/4 sheet pan. 13x9 1 1/2 RECIPES OF WHITE LILY CORNMEAL cornbread (on side of bag.) Bake at 350 degrees. Cook this until light brown and set. Do not brown too dark, it is not good in dressing dark. Ingredients: 1 FRIER CHICKEN (PREVIOUS PAGE) 3/4 OF CORNBREAD (DIRECTIONS ABOVE) 10.5 OZ. CREAM OF CHICKEN SOUP 4-5 PIECES LOAF BREAD (CUT IN CUBES) 2 BOILED EGGS (CHOPPED) 1 CUP ONION (CHOPPED FINE) 1 CUP CELERY (CHOPPED FINE) 1/2 TSP. SALT 1/2 TSP. PEPPER 1/2-3/4 TSP. POULTRY SEASONING 4 1/2 CUPS CHICKEN BROTH FROM FRYER 4 SQUARE CHICKEN BOUILLONS OR 1 KNORR 2 CUPS MILK 2 RAW EGGS Mix all ingredients together until well blended. I use my hands. Mix should be runny. Spray baking dish with Pam before adding dressing to baking pan to cook. Try to put in a dish that will make it about 3” thick, this way it will not be dry. Cook on 375 degrees until brown and firm. If in a deep pan it may take over an hour to set up completely. Make sure it is done!

CHECK OUT MY KITCHEN ITEM LINKS: http://www.collardvalleycooks.com/kitchen-item-links Biscuits like Granny’s 2 CUPS SELF-RISING FLOUR (WHITE LILY) 1 PINCH BAKING SODA 3/4 -1 CUP WHOLE BUTTERMILK 1/4 CUP CRISCO SHORTENING Blend Crisco and flour together with pastry blender, blending fork or with regular fork until shortening is pea sized. Add a dash of soda and mix well. Add buttermilk a little at a time until all flour is wet. Just until blended not runny at all. Note: Amount of buttermilk can vary depending on type you buy. Some are thin while others are thick. Sift flour out on counter and put out dough. Sift flour on top then knead 7-10 times. Pat dough about as high as biscuit cutter (3/4 to 1 inch high). Cut out biscuits and place in pan greased with shortening. Take buttermilk and pat tops of biscuits- bake at 450 degrees for 20 minutes. When done flip upside down to keep bottoms from sweating.
